Frozen Yogurt Berry Bark with Granola Crunch
This no-bake frozen yogurt bark is the ultimate summer snack — creamy Greek yogurt swirled with honey, bursting with fresh berries, and finished with a crunchy granola topping. It’s refreshing, protein-packed, and perfect for those hot afternoons when you want something sweet and cooling, without the guilt.
Ingredients
2 cups plain Greek yogurt (full fat or 2%)
3 TB honey or maple syrup
1 tsp pure vanilla extract
¾ cup fresh strawberries, sliced
¾ cup fresh blueberries
½ cup fresh raspberries
⅓ cup granola (your favorite kind)
1 TB chia seeds or hemp hearts (optional)
Zest of 1 lemon (optional, for a bright citrus touch)
Directions
Line a rimmed baking sheet (9x13 works well) with parchment paper or wax paper.
In a mixing bowl, stir together the yogurt, honey, and vanilla extract until smooth.
Spread the yogurt mixture evenly onto the prepared baking sheet, about ½ inch thick.
Scatter the fresh berries evenly across the yogurt. Sprinkle with granola, chia seeds (if using), and lemon zest.
Gently press the toppings into the yogurt so they stick.
Freeze for at least 4 hours or overnight, until completely solid.
Once frozen, break the bark into pieces and store in an airtight container in the freezer for up to 2 weeks.
